The 2nd category black truffle, is brushed or washed, to remove any soil and hasn’t been spoilt by frost. It is firm when you touch it. It can show some cuttings. It can be whole or morsels and have the characteristic colour and aroma of this category.
if your truffles are not eaten until 7 days after expedition of themself, you have to put them in the freezer.
