I am what is called a « trufficulteur » truffle producer, I come from an agricultural background, my family being from La Chapelle Montabourlet in Dordogne.
At home, I have always watched my mother, my grand-mother,busy with their cooking pots and jars, since 1948 ! For us, preserves, confits, foie gras duck or goose have always been part of the family tradition.
My father who was a pork butcher and caterer, at la Tour Blanche, in Périgord, whom I worked with for very long years, has given me his keen gourmet interest in authentic food products.
I have moved from foie gras onto truffles very easily. Since I was very young I have always walked through the family truffles areas and gone to the truffles markets in Périgord.
The truffles which I sell, only come from Périgord and Charente, two important production areas.
I find truffles, using the “fly method” which enables me to find perfectly mature tubers. They are then sorted by size, weight and aroma.
They are packaged on the spot, and in 2 or 3 days time after they have been dug out, they are ready to go…
