Truffle is part of our patrimony jewels, of our gastronomic culture and of calcaire soils. Fragrant and tasty, the fresh black truffle offers you its powerful aroma, its subtle and rustic taste, with remarkable persistence. It will be a fantastic experience, in either simple or rich dishes.
Black with a wart like skin, with very fine and close marbling, it is picked up from the 15th of November until end of February. The best moment is in January (but who knows with this peculiar tuber ?)
Summer truffles are also named «St Jean truffles » they are picked up from May to beginning of August, in the same soil as the black truffle.
